Homofermentative Production of Lactic Acid Exposed to Some Chemical Mutagens

ABSTRACT:

The influence of sodium-azide chloro-caffeine, chloralhydrate and sodium fluoride on lactic acid fermentation was studied. It has been found that only sodium fluoride at lower concentration enhances the production of lactic acid while sodium-azide, chloro caffeine and chloralhydrate has detrimental effect on lactic acid fermentation by Lactobacillus pentosus.
